Inspired by traditional Cantonese roast duck and tea-smoked meats, this turkey transforms your holiday into a celebration of harmony — rich glaze, golden skin, and fragrant tea smoke swirling in the air.
Ingredients
- 1 whole turkey (12–14 lbs)
- ¼ cup soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp minced garlic
- 1 tbsp grated ginger
- 1 tsp Chinese five-spice powder
- ½ cup orange juice
- 2 tbsp cornstarch + water (for glaze)
- For smoking: ¼ cup black tea leaves, ¼ cup uncooked rice, 2 tbsp brown sugar
Instructions
- Marinate:
Combine soy sauce, hoisin, honey, vinegar, sesame oil, garlic, ginger, and five-spice. Rub turkey inside and out. Let sit overnight. - Roast:
Roast at 375°F (190°C) for 1 hour, then lower to 325°F (163°C) until cooked (about 3 more hours). - Glaze:
Simmer leftover marinade with cornstarch until thick. Brush turkey twice during last 30 minutes. - Optional Tea Smoke:
Place foil tray with black tea, rice, and sugar under rack while roasting for delicate smoke flavor.
Serve With: Fried rice, sautéed greens, and pickled cucumbers.
